Ingredients

1 tablespoon ground ancho or pasilla chile pepper

1 tablespoon paprika

1 ½ teaspoons packed brown sugar

1 ½ teaspoons ground cumin

1 teaspoon garlic powder

1 teaspoon ground black pepper

1 teaspoon dried thyme

½ teaspoon salt

¼ teaspoon cayenne pepper

In a bowl, stir together all ingredients until evenly combined.

To use, rub about 1 tablespoon rub over 1 pound meat or poultry. Grill, broil, or roast as desired.
